What changes
What changes for whoever answers for the plant
Crossing between raw and cooked is one of the few faults you can’t see in the finished product. The tray comes out fine, it packs fine, and the problem shows up weeks later in a complaint or a lab result. The circuits are kept apart with paint, with doors and with training, and somebody still takes the short cut. IRIS sees the crossing while it’s happening and records it with the time, so the quality manager knows which batch was in the room that minute.

Does the camera know whether the product has been contaminated?
No. IRIS sees that a cart with raw product went across into the cooked area, and the exact time it did. Whether that contaminated anything, and how much, is answered by a laboratory test and decided by the quality manager. What the camera adds is proof that the crossing happened and the minute it happened, which is exactly what isn’t recorded anywhere today.
Does it also work for keeping allergen and allergen-free lines apart?
Yes. The rule is the same with different areas: allergen material entering a line that carries none, utensils moving from one area to another, a cart coming back the wrong way. The plant defines which circuits must not mix and in which direction, and IRIS raises the alert when they cross. The criterion is the plant’s; the camera only watches that it holds.
Does IRIS know who crossed?
No, and that isn’t what it is for. IRIS detects that a person with a cart crossed the boundary; it does not recognize faces, it does not match them against any file and it is not a tool for disciplining anyone. The alert says what happened and at what time. Who was on shift is something the plant knows through its own records, not through the camera.
